We had never had bok choi, kale, or mizuna before and have already found many wonderful recipes for these greens. I am so glad we decided to take the plunge into the CSA! I just wanted to write and tell you that we were quite happy with our first box! We had a delicious salad with the romaine, oregano and other greens. I look forward to a stir fry tonight with the bok choy (one of our favorites)! Thank you for the tomato plant - that was a treat and I look forward to watching it grow and produce. Just wanted to tell you that we do like the ramps. We use them in the Vita-Mix to make our veggie drinks. Thanks for letting us try all the new veggies that I was not familiar with. - L.R.
Loved the ramps in my eggs, actually used all the greens in my eggs. Also had lots of spinach to add to salads. Really crunchy. The ramps are so nice, a mild onion taste with a hint of garlic - yum. Thanks for all the delicious treats this past year. I have been remiss in not mentioning it sooner. Even my sons enjoy salads so much more when it's a mix of unknown greens (so crunchy) instead of any store lettuces. I have gotten my entire family to try so many new things -that alone is worth the price of admission. (Beet chips are another favorite). Keep smiling and God bless you all. - P.O.
We are huge fans of rhubarb pie - no particular recipe. We used the ramps in egg salad. I was really pleased with how that turned out. Good the first day, but great the second. And the raspberries were fantastic on waffles, and ice cream too. This week we are very excited to get the mint! We bought an ice cream maker last weekend and we are looking forward to homemade mint ice cream. - K.L.

I loved the ramps. I found a recipe on Epicurious.com for Seared Salmon with Linguine and Ramp Pesto. It was fantastic. The spinach in the last box was amazing and found its way into Epicurious.com’s Speed Spinach quiche recipe. I may make that one again with spinach from tomorrow’s box. Thanks so much for growing these wonderful veggies for us. - L.M.
Last week was my first box and it was so exciting to open it and see such wonderful, clean produce. I also am enjoying the raspberry spread! Hopefully this week’s weather will help.
